El queso de las montañas

El queso de Cabrales es un queso azul con DOP, elaborado artesanalmente en Asturias con leche cruda de vaca, cabra, oveja o mezcla de estas, procedente exclusivamente de ganaderías locales controladas y todas se alimentan en pastos de montaña.

Tras su elaboración, el queso madura entre dos y cuatro meses en cuevas naturales de alta montaña, donde la humedad del 90 % y la temperatura de entre 8 y 12 º C favorecen el desarrollo de mohos del tipo Penicillium, responsables de sus vetas azul-verdosas.

Su sabor es muy intenso y ligeramente picante, más acusado si contiene leche de cabra u oveja. La zona de producción comprende el concejo de Cabrales y algunos pueblos de Peñamellera Alta, y el Consejo Regulador certifica el producto, mediante rigurosos controles para garantizar su autenticidad y calidad. Cada queso se presenta envuelto en papel de aluminio verde y lleva la etiqueta del fabricante y la contraetiqueta oficial con numeración y logotipo.

The Cheese of the Mountains

Cabrales is a blue cheese with Protected Designation of Origin (D.O.P.) status, traditionally made in Asturias from raw cow’s milk, or a blend of cow, goat, and sheep milk, all sourced exclusively from locally controlled herds that graze on mountain pastures.

After production, the cheese is matured for two to four months in natural high-mountain caves, where the 90% humidity and temperatures between 8 and 12 °C create the perfect environment for the development of Penicillium mold. This mold gives Cabrales its signature blue-green marbling.

Its flavour is intense and slightly spicy, with sharper notes when goat or sheep milk is used. The production area includes the municipality of Cabrales and some villages in Peñamellera Alta. The Regulatory Council certifies the cheese through strict quality controls to ensure authenticity and excellence. Each cheese comes wrapped in green foil and bears the producer’s label along with an official numbered counter-label featuring the D.O.P. logo.
